Oatmeal Protein Pancakes 3 ways

With oatmeal, egg whites, cottage cheese, and fruit, these pancakes tick every box for a healthy breakfast. They taste great hot or cold for an on-the-go meal that will keep you sated for hours! This recipe makes 8 4” pancakes and will serve 2 very hungry people or 3 hungry people.

Ingredients:

1 cup quick oats, dry

1 cup carton egg whites

1 cup cottage cheese

1 tsp cinnamon

1/2 tsp turmeric

2-4 TBS brown sugar 

pinch of salt

vegetable oil

For Apple Cinnamon:

1-1.5 cups grated peeled apple

For Blueberry:

1.5 - 2 cups blueberries

Recipe:

  1. Mix all ingredients (except fruit) in bullet blender cup. Blend for 30 seconds. Let stand for 5-10 minutes

  2. Mix in grated apple, blueberries (optional)

  3. Spread 1 tsp vegetable oil in non-stick pan

  4. Cook 1/3 cup batter 2-3 minutes on each side on medium heat.

  5. Serve immediately with maple syrup or save for a snack! Great hot or cold.
