Cucumber Refreshers

Some days, chewing seems like so much work.

I should qualify that. Chewing vegetables seems like so much work.

Chewing cookies, cake, chocolate…those are very easy.

The solution? Drinkable vegetables!

With these refreshers, you can get your five servings in one glass (ok, it would be a pretty big glass. Maybe three servings is more reasonable).

Just in case you’re wondering, vodka and gin pair very well with cucumbers.

The Classic

1.5 cups seedless cucumber chunks

1/4 cup plain yogurt

1 TBS lemon juice (fresh is better)

1/4 cup ice

1/4 cup water

pinch of salt

Blend until smooth

Note: Amounts are per serving. Adjust ingredients based on your preference. Add more water if you like it thinner.

A Little Greek

1.5 cups seedless cucumber chunks

4-5 Kalamata olives, seeded

1-2 TBS feta cheese (I prefer brined feta)

2 TBS Greek yogurt

1 TBS white wine vinegar

1/4 cup water

1/2 cup ice

pinch of salt

A Little Sweet

3/4 cups seedless cucumber chunks

3/4 cups pineapple chunks

1/4 water

1/2 cup ice

pinch of salt

A Little Spicy

1 cup seedless cucumber chunks

1 cup tomato chunks (if tomatoes aren’t ripe, add 1 tsp tomato paste)

1 TBS fresh jalapeno pepper

1/4 cup water

1 tbs white wine vinegar

pinch of salt
